DuckOur ducks are all reared in air conditioned units, focusing on biosecurity, health and welfare, and complete with water baths to provide them with the best possible environment for nurture and growth. They are all Pekin Ducks, which are ideal for the preparation of the classic Crispy Aromatic Duck. They are cooked in traditional gas burners, and much of the preparation is done by hand, including removing pin feathers, de-boning, slicing and shredding. |
